In Sweden, there are over 30,000 commercial kitchens in public and private buildings. These kitchens produce large volumes of wastewater at relatively high temperatures. Thus, there is a great potential to reduce the energy demand by wastewater heat recovery.
Several Belok-members with commercial kitchens have expressed interest in such solutions, but also uncertainties regarding possible savings and available technology. They have especially asked for solutions that combine grease separation and heat recovery.
The expectation is that such installations would give larger savings at a lower cost, and also reduce needed space and increase the grease separator performance.
To meet the needs for increased knowledge and technology development, this project includes a measurement study to identify heat recovery potential in existing kitchens, as well as demonstrations of new and improved systems. The project shall lead to more efficient use of energy in premises with commercial kitchens.
