Lack of power and grid capacity is a growing problem in many regions. The purpose of the project is to meet this challenge through careful studies of the impact of commercial kitchens on the dimensioning of electrical infrastructure and the potential for peak shaving. This is achieved through collaboration between property owners and practitioners during the building's management phase. The untapped potential for peak shaving is un-explored yet believed to be significant.
In this project high-resolution data is collected, analyzed and made available for five school kitchens in Uppsala, and technical and behavior-related measures are tested and evaluated. Together with industry, current methods of dimensioning electrical infrastructure is reviewed. The results are expected to yield cost-efficient dimensioning, and more even power consumption in commercial kitchens and in other related areas. The highest power peaks in the five school kitchens are expected to decrease by at least 25%
