Grant Description

Purpose and goal:

The project directly aims to identify new foods that are not produced locally today and can be replaced by sustainable local production to save on transportation and benefit local employment. In the long term, the project´s idea can significantly improve the sustainability of the Swedish food supply by reducing CO2 emissions and increasing access to nutritious, locally grown vegetables.

Expected results and effects:

The project will result in new collaborations that lead to concrete circular solutions, products and processes for us and other food companies in the region. Our objective is to identify at least 3 new products with a large climate footprint that we can replace with local production through innovative collaborations with other local companies. When the project is finished, the organic by-products of our production will also be transformed into new products in a new circular production process.

Approach and implementation:

-Investigate the possibilities of growing and commercially replacing imported crops in practice and calculate the possible reduced CO2 impact of this. -Deliver these grown crops to selected restaurants and stores and evaluate.

-Use newly developed products as a first pilot case and compare these with imported products in collaboration with import companies.

-Spread awareness of the project´s results, sustainability benefits of the developed products and risks with long food transports.
