The objective of ACOFOOD is to promote the consumption of acorn by human beings as it is a nutritious fruit with high production in the Mediterranean region, selecting the genotypes with the best functional characteristics for the consumer, identifying markers related to healthy phenolic compounds and , the absence of astringency and cytotoxicity, and developing a healthy acorn-based food.

Mara Vzquez is a researcher with a scientific background in the field of postharvest of fruits and biomedicine, with great motivation to be able to combine these two disciplines, contributing to the implementation of a healthy and sustainable diet.
